Kale Caesar Salad

Paleo Gluten Free caesar Salad perfect for making ahead of time for salads all week


  • 3 bunches Kale
  • 1 tbsp olive oil
  • 1 tsp salt
  • 3 pounds chicken breast tenders
  • 2 cups caesar salad dressing (see notes)


  • tear the leaves off the stalks of kale and place in a big mixing bowl
  • add the olive oil and kale and use your hands to squeeze and “massage” the leaves until they soften, this makes the kale much tastier and perfect for salads
  • toss the chicken breast tenders in olive oil, salt and pepper, then either grill on medium high for 10 minutes, or heat on the stove for 10 minutes or bake in the oven at 425 for 30-40 minutes – i prefer grilling the chicken, i think it’s tastier and way less cleanup if you have a grill available
  • dice the cooked chicken, add to the salad bowl, pour the fresh homemade dressing in the bowl and mix
  • enjoy!

And then i take that mayo and turn it into caesar salad dressing with this recipe from Once Upon A Chef
